Woo Burgers in Paradise

To celebrate Theophilous Thorne-Bush's new book getting to the final editing phase I'd like to share a family recipe - Woo Burgers in Paradise

Burgers with a bite!

This is a burger that looks innocent on the outside but has a hot surprise inside.

Slightly beat an egg in a large bowl, add 2 pounds of lean ground beef, salt and pepper to taste and mix it up with your hands.

Place ¾ cup of the hottest salsa you can find in a strainer and allow most of the liquid to drain off.
Grate one cup sharp cheddar cheese and mix it with the drained salsa. You could throw in one tsp. of hot chili flakes for extra heat. You want this mixture to have a consistency that allows you to form a walnut sized ball to place in the middle of each burger. Chilling in the refrigerator for an hour makes this combination easier to handle.

Fire up the grill. While it’s heating, form thin burgers. Place your hot surprise between two of your thin patties making one solid burger with your hot spot in the middle. Pinch the sides of the burgers so none of the cheese/salsa mix oozes out during the cooking. That would ruin the surprise. Grill to your liking. A nice balance with this burger would be a grilled slab of onion to place on top and your favorite cold beer.
